2008/01/28 Potato crust quiche with sausage

I use a leftover baked potato, grated, mixed with melted butter, to make a crust in a 9-inch pie plate. I prebake the crust at 425 for up to 10 minutes. Then I pour in a mixture of 4 eggs, 1/2 cup milk, 1/2 pound browned sausage, and 1 cup grated cheese. bake at 425 for 15 minutes, then reduce to 350 and bake until done. It is puffed and brown on top when it is done, about 15 more minutes.

A couple of people have mentioned potato crusts, and I've been wondering how folks actually make it! So although I have my own favorite quiche recipe, the crust technique is a welcome addition.
