what's up, doc?

This year's carrot harvest. Usually I plant carrots, don't know when to harvest them, then leave them in the ground until next spring to rot. This year I dug them all and they'll go in the freezer for winter soups if we don't juice them all first. These are the rainbow carrot mix from Territorial seed. Mild flavored and yummy!

I hardly end up eating them. it could be your variety, the amount of water they get, or the soil I imagine. We juiced a bunch of these on Saturday. When eating them fresh, they were mild. Freshly juiced, were good. But as the juice sat it got bitter. Have you tried cooking them?

Do you ever have bitter carrots? This is the first year we've planted carrots and they've all been super strong and bitter. I figure it must be my soil, but I haven't looked into it yet.
